How long do ribs take to smoke?
At 250°F, start near 4 hours 45 minutes for baby backs, 5 hours 30 minutes for St. Louis ribs, 6 hours for spare ribs, and 8 hours for beef ribs. Thickness and the bite you want can move the finish.

Use the method as a starting point
Three-two-one is not a rule for every rack. Baby backs can turn soft before that schedule ends, while thick spare or beef ribs may need more time.
How to check ribs
Look for pullback at the bones, lift the rack to see how it bends, and slide a probe or toothpick between the bones. Stop when the bite is where you want it.
How the starting estimate is calculated
- Base time at 250°F: baby back 4h 45m; St. Louis 5h 30m; spare 6h 5m; beef 8h
- 225°F adds about 14%; 275°F removes about 12%
- Wrapped setting removes 15 minutes from the starting estimate
- Finish buffer: 35 minutes
