How long does a turkey take to smoke?
For a whole turkey, this planner uses about 30 minutes per pound at 250°F, 25 minutes at 275°F, and 22 minutes at 300°F. Spatchcocking shortens the estimate. Every checked area still has to reach 165°F.

Check the bird before cook day
The thaw date is an estimate. If the cavity or joints are still icy, keep thawing in the refrigerator and adjust the schedule.
Check every required location
For a whole bird, check the thickest breast and the innermost thigh and wing without touching bone. Every checked location must reach at least 165°F.
How the starting estimate is calculated
- Whole bird: 30 min/lb at 250°F; 25 min/lb at 275°F; 22 min/lb at 300°F
- Spatchcock setting uses 72% of the whole-bird estimate
- Cook range: 18% under to 20% over the starting estimate
- Finish buffer: 45 minutes
